At our shop, we value bringing out the natural character of each ingredient.
While our brand mainly focuses on the rare Shumari red beans from Hokkaido, we use Bitchu Dainagon red beanswhen making chunky red bean paste.

Bitchu Dainagon is a large variety of Japanese red bean traditionally grown in the Bitchu region of Okayama.
The beans are known for their large size, soft skins, and beautiful shape after cooking. They produce a clean flavor with a rich aroma and very little bitterness.

To preserve the character of these beans, we cook them gently with careful control of heat and moisture so that each bean remains whole and intact.
This method allows the beans to become soft and plump while keeping their natural shape.

The result is a chunky red bean paste that highlights the natural flavor and texture of the beans rather than relying on excessive sweetness.
